Oat Flour Pancakes
Breakfast is the most importand meal of the day, right? So why not have something that will keep you fuller longer, taste amazing, and something that you can change up. These pancakes are full of oats which are so good for you. They are full of fiber and lots of vitimins like iron, zinc, vitimin B1 and B5, and so much more. They also keep you full. Unlike boxed pancakes, you wont be craving another mean an hour or two after eating them. These pancakes will give you a healthy kick start to your day .
I love pancakes because you can change them up on your mood and on the season. I chose to cover mine in summer fruit and berries because they are in season. Cooking and baking with fruits and veg that are in season is one of my favorite things to do in the kitchen. They can make a dish that much better. If it was winter or fall I would probably top mine off with apples and pomegranates.
*TIP: Pancakes can be stored! If you are in a rush, if you meal prep, or if you have hungry kids in the morning, they are perfect. Simply make them as you would and let them cool completely. After, wrap a couple of pancakes in plastic wrap and stick them in the freezer. They will stay fresh for about 3 months. When you are ready to enjoy, take them out of the freezer the night before and place in the fridge to defrost. In the morning you can either drop them into the toaster or place them into the microwave for roughly 1 minute. *
Oat Flour Pancakes
Serving: 6 pancakes
Ingredients
2 1/2 cups oat flour (If you don’t have any, place rolled oats in a food processor until they resemble flour)
1/2 tsp nutmeg
1 tsp cinnamon
2 tsp baking powder
1 mashed banana (the browner the better)
2 cups milk
2 eggs
2 tbs flax seeds
Butter
Topping ideas
Greek yogurt
Peaches
Berries
Apples
Pomegranates
Maple syrup
Jam
Peanut butter and banana
So many more I’ll stop there but let your imagination go wild
Instructions
Place oat flour, nutmeg, cinnamon, and baking powder in a bowl and whisk until combined.
Add mashed banana, milk, eggs, and flax seeds and whisk together. You want to whisk for about a minute.
Set mixture to the side for 8-10 minutes. (This will help it fluff up the batter so you get those fluffy pancakes we all love)
While the mixture is resting to the side, set a large frying pan on the stove on low. This will help get a golden crust.
After waiting (which might feel like forever) place a small slice of butter in the center of your pan and let it melt. Turn up the stove to medium-low. With a ladle, dollop a spoonful of batter on the center of the butter. (At this point you can add berries, bananas, or whatever your heart desires) They will be ready to flip when small bubbles start to form in the center of the pancake. When this happens, flip your pancake with a spatula. Let the second side cook for around 2 minutes. Make sure both sides are golden brown so you do not get any raw batter in the middle!
Now is the fun part. Finnish off your pancakes with toppings that sound good that day and enjoy!
