Heirloom Tomato Peach Burrata Panzanella

People, it’s finally the time of year we have all been waiting for. The time when peaches are at their peak, tomatoes are exploding with flavors and we don’t have to settle for the bland, lifeless ones from the supermarket, melons carry the weight of a small child and loaded with the sweetest of flesh, and the list goes on. The best part is enjoying these gifts of summer in the sun with the ones we love.

I understand that times are still weird and nowhere back to normal, nowhere near what we hoped this summer would bring. That dosen’t mean you can’t cook like you were going to for those dinner parties you dreamed of during the cold months. That is the main way I have been keeping my spirits up and trying to feel as normal as possible. This panzanella will make you smile with every bite tasting like summer on a fork.

Ingredients

  • 12 oz. crusty bread, cut into 2” cubes

  • neutral oil

  • 2 ripe peaches, cut into slices

  • 1 large heirloom tomato

  • 1/2 cup cherry tomatoes

  • 2 sprigs fresh rosemary, finely chopped

  • salt and pepper

  • 1 large ball of burrata

  • good quality olive oil

Instructions

  1. In a large skillet over medium high heat, add bread cubes and a couple of glugs of neutral oil to coat all the pieces. Stir occasionally to prevent burning and to get even browning. Take off when pieces are golded and not too crunchy.

  2. While bread is cooking, put peach slices on a grill pan with a small drizzle of oil to prevent sticking. Place pan over a medium heat and flip peach slices when sides have color. When done remove from heat and cut slices in half.

  3. Cut heirloom tomatoes into similar sized chunks as bread. Place on a towel and lightly salt to draw out some liquid and let rest for a few minutes. Slice cherry tomatoes into halves and fourths.

  4. In a large bowl, add toasted bread, grilled peaches, tomatoes, rosemary and salt and pepper to taste. Drizzle with a healthy amount of good quality olive oil and give it a good mix. (This can be easier to do with your hands)

  5. Grab your ball of burrata and rip into chunks evenly over the top of your dish.
